Paleo for Kids: Cookie Bars!
I am a big believer and follower of the Paleo lifestyle. As adults its easy for us to make decisions both good and bad, on what we feed not only ourselves but our kids as well. I’ve found through trial and error many many delicious Paleo snacks and desserts kids are sure to love. Many of these recipes taste so similar to the real thing kids will never know. And besides, it’s ok to trick kids into eating healthy, they’ll be surprised as to how good some of these snacks actually are!!!
I’ve made these cookie bars many times and am constantly amazed how good they taste. If I didn’t tell you they were paleo you wouldn’t be able to tell the difference. I found this recipe at Paleo for Kids…Enjoy!
Ingredients
- 12 Medjool Dates (Manually remove the pits)
- 1/2 Cup of Slivered Almonds
- 250g Almond Butter (or other nut butter)
- 2 Tbsp Cacao Powder
- 1 Cup Flax meal
- 1/2 Cup Dark Chocolate Chips (try to use the dairy free ones)
- 1/2 Cup Dried Cranberries
- Non-stick Baking Paper (wax paper)
Method
Step 1
In a food processor, add the pitted medjool dates and process until a ball forms.
Step 2
Add the almonds and pulse until the ball becomes a nutty ball… 🙂
Step 3
Add the rest of the ingredients and process until the mixture becomes crumbly – don’t overdo it, otherwise the chocolate and nuts will be too small. You want chunky bits!
Step 4
Line a shallow square tray or bowl with some non-stick baking paper and pour the mixture out onto it. The mixture should resemble course bread crumbs.
Step 5
Spread the mixture against one side and compact it with your fingers. It should be about an inch high.
Step 6
Cut into mini bars. All done!
