June’s very special member of the month is Roman Castillo. Roman was born and raised in our own French Quarter. His Godfather would pick him up everyday and bring him to Lakeview where he attend St Dominic. From St Dominic, Roman then went to De La Salle where he played on left guard on the football team. After high school Roman went to UNO and started on a degree in Business Administration. After hurricane Katrina, Roman was evacuated to Tampa Bay, Florida where he attended the University of South Florida. It is in Tampa while in school that Roman got a cooking job an his life changed forever. Discovering his love of cooking and realizing he a real talent to cook, Roman moved back to New Orleans where he went to Nicholls State and attended the John Folse Culinary Institute, receiving his BA in Science/Culinary . After school, Roman started his cooking career in his beloved hometown. If you’ve had a meal at K-Pauls, Luke, Rock-N-Sake, Oak Wine Bar, ALe on Oak, or Coquette, you may have sampled some of Roman’s work. Roman has now decided to give baking a go , working at Debbie Does Doberge. Good luck in your new opportunity Roman.
Roman has been a member of The Parks for about 14 months. This is an amazing amazing story. When Roman started, he weighed 295 pounds and had a 54 inch waist. Today he is down to and incredible 184 pounds and a 32 inch waist. WOW!!!!!! When asked what he attributed these incredible results to , Roman simply said Zach. Zach’s training, workout sessions, healthy eating tips and encouragement combined with Roman’s work effort and dedication is the reason for this amazing weight loss. Roman works out 4-6 days a week for 1 to 2 hours. Roman told us that he and Zach went to De La Salle together and back in the day, Roman being a year older “vouched ” for Zach and helped him get accepted in the “cool ” crowd. Roman said that now, Zach is repaying the favor helping Roman to be the best he can be (and be the coolest again!). All of us on the Parks staff have the seen the hard work that Roman puts in and can only say, great job. Keep it up . You are such a motivation !
